The baking technique is similar to smoking, the only difference being that it also allows the usage of flames along with smoke to cook the meat.
- Braising: It is a technique which requires frequent change in temperatures, going from fast to slow, and then again fast. The technique last for few hours, while employing direct dry heat charbroiling on a grooved surface with a broth-filled pot that provides with soggy heat.
